Happy Cinco de Mayo

Oh! it is May 5th already. I don't usually celebrate this wonderful occasion, but since I work at a school, I kind of have to. So, today I have plans to talk about Cinco de Mayo and some sort of arts or crafts activity and then having my older kids make quesadillas. We are not using the store bought tortillas. OH NO! I had to decide to make it difficult on myself and make them from scratch. 72 tortillas...not all the same size or shape mind you, but I got it done in about 2.5 hours. I really wish I had a tortilla press at this time...using a rolling pin was just too darned slow.

2 bags of fresh tortillas...not enough for everyone in the program, but it is OKAY! I will just have the older kids make some more XD
